THOMAS CARDARELLI MOVED TO WASHINGTON, DC TO JOIN NEIGHBORHOOD RESTAURANT GROUP AS EXECUTIVE CHEF AT VERMILION IN MAY 2017, WHERE HIS FINE DINING BACKGROUND LENDS ITSELF NICELY TO THE OLD TOWN, ALEXANDRIA STALWART. THOMAS DEBUTED HIS REVAMPED MENU IN JULY, AND CONTINUES TO HONOR THE UNWAVERING COMMITMENT TO SUSTAINABLE, LOCAL SOURCING FOR WHICH THE RESTAURANT HAS BECOME KNOWN.

THOMAS BRINGS OVER 12 YEARS OF EXPERIENCE TO HIS POSITION AS EXECUTIVE CHEF AT VERMILION. ORIGINALLY FROM SYRACUSE, NY, THOMAS STUDIED JAZZ TRUMPET PERFORMANCE AT NYU BEFORE CHANGING TRACKS AND GRADUATING FROM THE CULINARY INSTITUTE OF AMERICA.

WHILE IN SCHOOL, THOMAS WORKED AS A LINE COOK AT THE INIMITABLE JEAN GEORGES. FROM THERE, HE CUT HIS TEETH IN THE MICHELIN-STARRED KITCHEN OF THE MODERN, BEFORE WORKING HIS WAY UP FROM LINE COOK TO EXECUTIVE SOUS CHEF AT MICHAEL WHITE’S PRESTIGIOUS MAREA IN NEW YORK. DURING HIS TENURE AT THE AWARD-WINNING ITALIAN RESTAURANT, THOMAS SPENT A WEEK STAGING AT ALAIN DUCASSE’S LE LOUIS XV IN MONACO’S HOTEL DE PARIS. IN 2015, THOMAS WAS TAPPED BY ALTAMAREA GROUP TO BE A MEMBER OF THE OPENING TEAM AT VAUCLUSE, WHERE HE SPENT TWO YEARS AS THE BRASSERIE’S EXECUTIVE SOUS CHEF.
